Zest Kitchen and Bar would be near the top of the heap in both the “hip” and “forward-thinking” categories were it located in, say, New York City. But on the high desert of Salt Lake City, Zest’s commitment to local organic produce and liquor, its haut vegetarian menu, and its nightly changeover from conscientious eatery to thumping dance club put it in a category all its own.
